Ok - it isn't my truck - it's my uncles

S-10 with a 350 in it

Runs perfectly for a few minutes then acts like it's run out of gas

Wait a few minutes and it fires right up and runs fine for a few minutes then repeats above

New tank
New sender / pump
New gascap
New filters
New carb

Filters are clean, just empty then they refill after a few minutes

Does the above with or without the gascap on, so it's not a lack of air vent issue

Vapor locking ? but we can't see anywhere that is suddenly getting hot enough
Bad fuel pump ?

Ideas ?
