Well, I tried it, and you're right...my cute little bit of aluminum behind the cooler blew off while going down the road, and I just never got around to making another...I plumbed in a thermostat instead. The aluminum seemed like a good idea at the time...
My normal water temp runs 185-195 F, and unfortunately the oil is just a bit lower at 180-190 F...about 30 degrees colder on the oil than I would like.
