Hydraulic is what most Cobra guys run and allows the most amount of tweak-ability (if that's a word).

The only issue with clutch cables is that they can stretch with higher performance clutch kits.

You can switch over as long as you feel comfortable with adding a clutch pedal that can use a clutch master cylinder. Also, the slave cylinder will have to be mounted in the trans tunnel.
