 Bill Neale told me the story about Larry Lavine starting Chili's restaurants by asking his father-in-law Carroll Shelby for a loan, and Shelby told him something to the effect "okay but don't screw it up with fancy stuff - just serve beer, burgers and fries".    
 I remember in the early '80s going to the original Chili's on Greenville and Meadow lane in Dallas at least once a week, waiting in a long line if you got there later than 11:30am - and their burgers were HUGE, greasy, cheesy, and the next best thing to heaven on earth.   I wonder what CS would think of the place now - its certainly not the same anymore.
