You will be doing that for sure.
1) Assemble everything except for carpet, and make sure everything fits.
2) Take it for a ride. Check to make sure no interference with any moving parts.
3) Body work and paint prep (disassembly optional, dependant upon painter)
4) Paint
5) Reassemble and install interior.
