Does AC give you the option of buying your kit in steps?

I was very curious of this,i know Shell Valley and Longstar Classics do,i was thinking about LSC because im 6'3 and i like the 94 inch wheelbase,but the Gel coat options of AC is very very hard to ignore,and Shell is attractive because you can build piece by piece if you need to.And does tall guys fit in a AC? And how do you rate their quality compared to the other 2 i named? I've been trying to get in touch with LSC for over a week email and phone still no go,their customer service seems very supsect to me and they are nearly ruled out,so give me your thoughts guys it would be very helpful thank you!
