My last option is to pull them apart and have them respraye, but then I will need to get the raised white lettering redone. All possible but a pain in the rear end!
Does anyone have any ideas that I can use to avoid a full disassemble, respraye and reassemble?

Sorry Chucky, they're too far gone.
I refinish Brembo calipers for the Subaru/Mitsubishi guys and when they have delaminated like that, we get them media/soda blasted back to bare metal, and start again by etch priming and then 2 packing them/baking. At this time, it's usually a good idea to rebuild the caliper with new seals/rings.
Also, re the lettering, I could be wrong but I don't believe Brembos had raised cast lettering. Usually the Brembo lettering is produced from a computer cut decal/stencil. Some are stuck on top of the clearcoat (a'la Nissan 350Z) while others are painted on (a'la Subaru).
We have a Roland vinyl cutter on site and cut the Brembo logos out, then either clearcoat them in or paint them on using stencils and then clearcoat them in (depends on the customer's preference). The beautiful thing about painting the logos on is that the colours are unlimited! If I can help in refinishing your calipers, feel free to let me know.
To give you an idea of the quality I put out, here's a caliper I painted about 3 years ago in candy orange with painted lettering. The caliper looks as good today as the day it was painted and they're fitted to a 300kw (at the wheels) STi:
