How y'all are? (as / Justin Wilson- Great backyard Chef) I came up with a great idea for the veggies:) I had some of these yesterday and it will make a Great Side for the ribs. More finger food - WB - NEED "MORE NAPKINS" I will need use of a grill, and are hoping you are still bringing yours. If not, let me know and I will rearrange trailer to bring mine along with the sink /prep table. Hope there is still room for the car!!!!!!!!!!!!! Also, need a head count from Doug so I can stock up here, don't think the 7-11 will have what we need. Plus I would like to make the sauce here and use all the blenders for boozing and not fooding. OK, guys things are really shaping up nicely. We have loads of stuff for door prizes. For Thursday Smoke out, I would count on around 70-80 people. I would think we want to give everybody a taste and not fill them up, though. Somewhat like a cocktail party, to do some socializing?

Hell...I'm bettin' that even if things DON'T go as planned we'll have a good time. It's all about the PEOPLE anyway, and we've got some good folks commin'...! Add a little Cajun seasoning, marinate in more than a little adult beverages, squeeze in a pinch of hickory smoked ribs, stir in a little horsepower and a dash of burnt rubber, add some good stories and we gots us a party...!

Ordered the Fixings today
I ordered 3 different types of facacio bread, which is what the veggies go on. Makes for easy eatin' and messin'. I just tried a sample of the veggie thing, as a little home test before we take it on the road.
All I can say is GOOOOOOOOOOOOOOOOOOOOD!!!!:D WB, WE GONNA NEED LOTS OF NAPKINS!!!!!!! :D Freddie, Doug, or anyone else: Tables for setting out food? I think we will need something. :confused: Maybe the hotel can fix us up with some banquet tables? TL :MECOOL: |
Boys, Save me a spot for my rig 75' long with has a 42' x 20' party tent on the side of the rig. You guys can smoke and drink in style this year. Also we have a 500 Watt PA and sound system that will be on the trip all we need are cd's to play. So bring your favorite music. (No 8 Tracks for you older guys)

We have tables chairs etc. We be ready for this partaaaaaa! I will be there Wed. doing final checks etc and securing our spaces. DB, we will have you a spot roped out to set up, so we can circle around the wagons. We must be discreet about the food, as their policy is that they handle all food service on their property, but they can't dictate that to the RV park, and we just happen to have the front five spaces reserved adjacent to our Cobra parking. They know we are planniing this food thing, they just asked not to be too obvious throughout the Casino parking lot.

Eric....you're time's a-comin', my friend...once you smell those ribs and that mouth get's to waterin'....well, hell, you remember "Deliverance", doncha...? "He sure has a purty mouth, don' he?" ;)
Now, then....if there's gonna be 70-80 folks there on Thursday evenin...SOMEONE ain't gonna get many ribs.....my smoker just ain't THAT big, boys. Lessee here....there's about 14 bones per rack, and I can do 8-9 racks of ribs...so that's (two plus eight divided by 6 beers, times four Citrons....) that's about 126 ribs - on the high side. I'm bringin' 5 pounds of sausage to smoke, too, so maybe that'll keep the natives at bay. Hell...don't be bashful here, folks.....you're all welcome to contribute something to keep this shindig rollin'.... Who's got beans comin'.....? Terry's already signed on for some grilled veggies on foccacia bread....(sounds goooood, too, Terry!) Wes has got some bread comin' along with plates, utensils, etc..... Anyone else gettin' in on this....? It'll be a hooooot, fer sure.... PS....cleaned up the trailer yesterday....got all the South Carolina bugs off from my trip to Kershaw over Labor Day weekend (even got the sand outta the trailer from #770's agricultural excursion thru the beautiful Carolinian countryside :rolleyes: ). Cleaned up the smoker and it nestled in right under the race tires really nicely. Loaded up the charcoal, hickory chips, lighter fluid, etc. Man, we're gettin' close..... PPS....I got Cajun, fiddle-sawin' two steppin' music, too. Got CD's - everything from classics to country western and everything in the middle. The more ya fart, the better you'll feel. So, eat yer beans at every meal! Bring the "Smokey Joe"....but we gotta get started early, Eric....what time are you planning on getting there? And ribs would be welcomed... The only thing limiting me is the size of my smoker. It's pretty good size, but 8-9 racks is all I can do at once...I could use some additional cooking space, fer sure. I'd say bring about a gallon 'r two of beans, hell, I don't know. Not everyone will want some...but most will, I'd think. And no sense in any one of us taking on more than anyone else....you don't have to be the only one bringing beans....! We can probably go to a local grocery and purchase some beans if we determine we'll need some. I'll go on a internet search of the web near Magic Casino and find out if there are any grocery stores with deli's located near the venue. I'll post the results... I'm sure lookin' forward to this... PS...I'm picking up 8-9 racks of baby back ribs Tuesday PM. They'll be put in the marinade Wendnesday PM, and then loaded in the cooler Thursday AM early for the trip to the Gulf Coast! If you're planning on bringing ribs, Eric, bring as many as your Smokey Joe can cook...we should be slick.... |
