I'm currently using a FAST sequential injection system with a single throttle body. Although the 8 stack systems look awesome, i decided to start with the throttle body for simplicity and cost. Simplicity is a relative term however. You definitely have to be willing to put the time and money into a good dyno tune. The FAST system (not FAST-EZ) has wonderful flexibility and an excellent user interface.
I suggest saving a few grand and starting with the throttle body system. You can always switch later if you have the need to continually tinker like I do.

I originally purchased a Mass-Flo system but really had bad luck with it. I've been very pleased with FAST. It is well known that there are better, more powerful systems, but FAST, being a subsidiary of Comp, has superior customer service and online support. That is also a known fact. Food for thought and JMO.

If you want a REALLY good efi- system, ther are two options. Either factory EEC IV or one of the high- end aftermarkegs like Motec M800.
After spending 6 months trying to get rid of some minor low- speed running problems with a fast xfi xim lsx coil setup. even with help from alot ot experts, it show the weakness of the system. The fast IS a good system, but it lack alot of the adjustability you find in, for instance, the motec. Fast is fairly easy to tune, motec is not.
People over here spend in average 1000 - 3000$ to get their systems running a good map from the pros on their dynos.
