Carroll Shelby, chairman and founder of Carroll Shelby International Inc. (Pink Sheets: CSBI), has formed a company to produce and sell food items under the “Shelby Signature Foods” name. The company will focus on healthy comfort foods, as well as regional specialties such as salad dressing mixes, cornbread, salsa, and fried chicken batter mix.

“I’ve always loved to cook and people really seem to enjoy my creations,” said Mr. Shelby. “Shelby Signature Foods gives me a chance to have fun in the food business again by feeding the demand for my recipes, while also raising some money for my charitable foundations.”

"Healthy comfort foods"? That's an oxymoron. Salad dressings, cornbread and fried chicken batter are NOT considered healthy foods, but hey, the salsa is.

I'm surprised he didn't add "organic" when he described his line of "healthy comfort foods." I heard his first product to market will be a Chinese dish called "Sue You Chicken." :LOL:

He used to sell a chili mix years ago, I bought it at the time - it was called "Moon Shot Chili" I think and there was a picture of an outhouse taking off like a Redstone...


It was a tad spicy...

He also helped start the “Chili’s” restaurant chain with Larry Lavine in 1975. Shelby was involved in choosing the menu and designing the restaurants. Many of them feature décor from the Terlingua Chili Cook-offs that Shelby helped create.


My wife and I go to Chili's. We went to the Vegas one on the way to our friends house after we got in and they were both working.

"Terlingua Chili" is supposedly on the menu. I'd never seen it but now we're going to have to go to check it out.
