I live in Santa Cruz and the drive along the coast is spectacular. My recommendation would be to drive South from San Francisco on Hwy 280 and cut over to to Hwy 1 South on Hwy 92. That ride will take you through Half Moon Bay and down the coast through Santa Cruz on your way to Carmel.
Map it out for distance and time. It's not a difficult drive, but it will take you some time. It's definitely worth it.
