The needle should thread out. It sounds like the o-ring around it has gotten either stuck or hardened and it isn't coming out easily. The needle needs to be threaded out as much as it will go( see the small flats??), you may then have to pull up on it. You didn't need to pull the baffle, they are designed to be changed without removing the bowls. It also helps to spray some WD40, or similar lube, down around them to help the o-ring release.
