It's not cheap, but I bet that Tony Revetti (who builds the console for SPF cars sold by Second Strike) might be able to customize one to your specifications
Mk III Console
He built a modified one for me that wasn't as tall because my seat is bolted to the floor. Works great for freeway cruising and to have a place to throw stuff in.
