Actually the track is pretty safe. You go out in your group of about 15 cars. You are not all together so it's not like wheel to wheel. There are strict rules regarding passing, etc. and you will get black flagged and thrown off the track if you are a jerk. At tracks like Pocono there is no barriers on 95% of the track so if you go off you just get dusty.
It is a good way to get to know your Cobra and how they really handle. You get pretty good at it after awhile and get to know you (and the Cobras) limitations.
