A couple from different sources:

One that my associates always recall me saying when they get ready to start a war with the other side: "Don't start a fire until you have something to burn." I have no clue where I got that from.
Another one they remember when they are new and come and tell me they can't find a case on point: "You mean to tell me that in several hundred years of jurisprudence, no judge ever said that anywhere? Wanna bet your job I can find a case?" That usually results in them pulling an all-nighter at the law library.

One I've used on many occasions (usually at work).
