I'll second the vote on Unique. In addition to the accuracy of authenticity, they are great people to work with. I've been to their shop a couple of times, and they spent all kinds of time with me showing me works in progress and answering questions. They've been in business for a long time and know what they are doing.

You've maybe already taken a look at their website.....consider the level of completeness of assembly that you get with the Deluxe Pallet Kit (ie., suspension installed, brake lines already bent and run, etc.). Even if it's some work that you feel you would want to do and could do yourself and save money on what might be considered labor on their part, this will save you loads of frustration in that for any disassembly of their work that you have to do for drive train insertion and body work, you know it will go back together because you took it apart, and you don't have to worry about things not matching up or missing parts or fasteners. In the end, you will be on the road much quicker, and that little bit of extra money up front will seem like a small price to have paid to get you there.

Also, being just one state over, it would make for an easy day trip if you want to check on build progress, and a much easier and probably less expensive delivery when the time comes, even if you pick it up yourself.
