Just pulled the trigger on a Shell Valley complete kit. Dana has been very helpful answering a lot of the questions you have asked. Unless you are racing an IRS rearend would be a luxury. 15 or 17 wheels are personal preface. After looking at a lot of cobras I went with 15's. Dana will share with you the backspaces you need.
