Need word from Doug Reed. There is some concern the Hotel will get all snotty about us cookin' in the parking lot and not giving the dinner business to them. Regardless of how nuckin' futs this seems, I don't want to do anything that will cause Doug any problems with the Hotel and that might cause them to look unfavorably on us...we may want to go back there again. I can be ready to cook with a couple days notice, though. Also, ribs need at least 6 hours on the smoker to get done and be 'right'....anything less is forcing the issue.
So...it depends on what Dougie and his crewe thinks is best. I'm willing and able...just need a nod from the coaches.
