If you go to this thread (Assembly manual) there were a couple of members with build / assembly manuals. You could reach out to them to see if they still have those manuals and if the manuals say anything about tire and wheel sizing.

I realize it's a different kit and a different manufacturer, but I've looked at the Factory Five assembly manuals for both the MK 4 and MK 3 cars. I found nothing in the MK 4 assembly manual about tire sizes, but page 174 of the MK 3 assembly manual (http://www.manikllc.com/manuals/Fact..._v_2005-09.pdf) does show maximum rear tire widths of up to 315mm, depending upon wheel width and back spacing. There is also a Tech department phone number you could call - perhaps they could provide a document of some kind that Italian authorities would accept, given that such information is not available from Everett Morrison.
