Just wanted to add my appreciation of your skill, dedication, and hard work. You've done something truly amazing here, and I can't wait to see the finished masterpiece.
As for how to finish the dash, I don't think you can go wrong with painting it body color, however white might be a bit bright on a sunny day. I think you had mentioned calfskin previously, how about Alcantara or suede? Maybe a combination? It would be a challenge (we all know you don't mind a challenge  ) but perhaps suede around the gauges and leather on the tranny tunnel, with a nice double stitch between the panels? Just a thought, I have no doubt whatever you come up with will be amazing.
I've read this thread a couple times now, and the thread on ffcars also, and am now subscribed to it. Not sure why I hadn't done that before. Keep posting updates many of us are living vicariously through your work.
