FI is significantly more complicated and if you are using an aftermarket system you'll have to do a substantial amount of programming (fuel maps, accelerator offset, and so on).
I've got a 900cfm Holley ProJection FI on my 351W and love it ... now that I've got it tuned up. Cold engine, no problem... no hesitation or anything.
Carbs on the other hand are fairly simple (if you or a buddy know what they are doing), don't require any wiring (electronics are scary to most folks), and work pretty darn well when tuned properly.
