by all means the taurus or a mark viii fan, spal makes a controller for them that is pretty trick you can set on off temps.

you can pick up used fan assemblies in the boneyard, google it you'll see dozens of how too's on the subject

The Spal controller has been know to fry with the Taurus fan, too much of an amp draw on high speed for the controller's internals.

Hollister road's setup is what I use. With it you can have two temp sending units that bring the low speed on at 180 deg f and the high speed on at 195 deg f. I've used it for years without a hiccup.
