The 363 is a larger bore as you have mentioned, of 4 1/8th bore compared to the standard 4 inch bore.

I think you just have to see what you want to do with the car, a 5ltr windsor with some heads nice cam will be plenty enough to get you into trouble on the street.

A 347 stroker is a nice option to give yourself a bit of a fright every now and then, just don't rev it, if you keep it under 6k it will last for ever.

I have an Iron eagle block with a 363 capacity and love it, revs to 7500 and has more power than I will ever need.

Another thing you should concider is the handling and braking of the car, they so unforgiving and to had a couple hundred more HP is not a good mix. I would also look at a brake upgrade and a bit of a going over the suspension as well.

Thanks Philm.

I appreciate the guidance.

This is a must do and will do the brake upgrade (including booster/servo, calipers, rotors, lines, bias, master cylinder, etc) when the engines out.

I am networking with a few suspension mobs ATM for the best options to suit the configuration, as I want it to be drivable in traffic as well as the open (without a need for a defibrillator)...thanks again Adam.

Make sure you talk to some folks experienced in setting up a DRB. There's plenty that have made them handle and stop real well. A regular suspension shop may look at the torana components and think the ususal setup for torana will work. The weight and weight bias of a Cobra is totally different so that setup may not work.
