More than you need.
The 363 is a larger bore as you have mentioned, of 4 1/8th bore compared to the standard 4 inch bore.
I think you just have to see what you want to do with the car, a 5ltr windsor with some heads nice cam will be plenty enough to get you into trouble on the street.
A 347 stroker is a nice option to give yourself a bit of a fright every now and then, just don't rev it, if you keep it under 6k it will last for ever.
I have an Iron eagle block with a 363 capacity and love it, revs to 7500 and has more power than I will ever need.
Another thing you should concider is the handling and braking of the car, they so unforgiving and to had a couple hundred more HP is not a good mix. I would also look at a brake upgrade and a bit of a going over the suspension as well.
