You WANT to have your oil around 100C to "boil" off any water moisture that it may obtain. 120-125C is high but not outside of oil capabilities.
Water temp is more what type of pressure can your hoses take before they leak or blow off, but as far a temp again 120-125C is OK.
Oil pressure is dependent on the oil temp, it should be high when cold and lower when hot. But always remain above ~40PSI or ~3 BAR and below ~90PSI or ~5.5 BAR. IMO
this would probably get a better response in the "all cobra talk" or engine area as it is not a BDR specific question.
