Guys, I don't want to sound like I'm backing out or anything, but this group is getting pretty big, and I have some well founded doubts concerning my capabilities as the host to get all this organized. I'm going forward with it of course, but i could use a little help. I'm fine with the afternoon carshow/cookout/beer deal at the beach on June 30th, and am planning a "low country boil" as well as chicken but I'm a little lost as to what to do about the rest of the meals except to keep on having more and more cookouts. I can leave myself in charge if there is no response, OR
Group 1 can arrange a menu for the July 1 lunch at the track, which will be a cookout I'd imagine.
Group 2 can ditto the above for the July 2 lunch
Group 3 can come up with a dinner menu for our post-race trackside dinner.
I have a caterer for the lunches, the track manager, but he "only does chicken", so we can leave it at that, but I hope you like chicken, beans, and corn.
I don't want to put this off on anybody, but can anybody cook ? I absolutely can not cook. What I'm looking for here is some sort of menu ideas so that I can go to the store with a shoping list.
My wife just laughted at me and shook her head when I mentioned this to her.
Any ideas for menus would be appreciated. Otherwise I will get chicken, beer, hamburgers, beer, shrimp, beer, etc.
The problem is that there is no way to keep all the food cold at the track for longer than a few hours.
Was anybody a cook in the Army ?
