It is a cool factor as much as anything else. Also, I think it makes the plumbing look cleaner to have it and an oil thermostat.

I wouldn't run an oil cooler without an oil thermostat.

I have my oil cooler installed but capped off. I've run the car in 98 degree weather with no cooler and the oil still doesn't get that hot. I wouldn't mess with the complexity of the thermostat. You'll never need the cooler unless you race but it does look cool.
