You can just run the carburetor dry or drain it when you put the car up for the winter. It is also a good ideal put a stabilizer in the fuel if it is going to set for very long. One other thing that is not a bad ideal to do with any car is start it up about once a month and let it run a while.
I have some muscle cars and they set for a while and these are the things that I try to do with them every so often. We will be glad to help you with anything that you might need when you get ready.
