I believe the rear panel on all original Cobras was vinyl. The pockets for the plexiglas side curtains was a vinyl material with elastic sewn in the top edge. Many have been replaced with leather pockets. Most of the pockets were black vinyl but some of the early cars with red interiors had red vinyl pockets (i.e. CSX 2149). I have the original pocket from that car as well as the original black vinyl pocket for CSX 2401.
The covering over the rear fender wells in the interior was leather on the original cars that I have inspected closely. (I need to look at CSX 3288 more closely to see if those pieces are leather, but on the 289's they were leather).
COX 6126 had original naugahyde tan seats and a tan naugahyde pocket, the only one like that that I am aware of.
