Probably the best way to find out is to put your body on your chassis with the wheels you want to use and take some measurements. You can get backspaces these days in just about any size you want, so if you want the deep dish look, you are probably looking at a 3 1/2"-4" backspace on whichever wheel size you choose- 15" or 17". A number of replicas are set up to use stock Mustang or other wheels with a backspace of around 6"-6 1/2". Much cheaper source of wheels if that is a concern to you and you can probably find 9" rears already shortened for your purpose.
