The only 5 speed Ford racers of the era were the GT40s which had ZF 5 speed transaxles. The 427 engined cars (Mk IIs, etc. ) went back to 4 speeds with transaxles using top loader internals.
The aerodynamics of the roadsters are indeed poor. My old 427 developed enough front end lift at 135+ that the steering became noticeably lighter. I'm sure that any owner of a replica that has pushed for big numbers has experienced this.
