9 Qt Canton Street/Road Race Oil Pan

How much Qt`s of Oil is the minimum you have to put in in a 9 Qt Canton Street/road Race Oil Pan?
The Dipstick marks FULL, and the Oil Pan has only 2" high OIL LEVEL in the Pan. Approx. 4 Qt`s !!! And The rest ??
I detect it on my last drive, when the Oil Temp. indicator jumpt to the max. driving a little bit hard in turns, and then it jumps back and forward.
Filling up two Qt`s moore Oil, the problem disappears. That makes now 6 Qt`s of Oil. And the rest ??
