Based upon what you wrote it's not clear to me whether your calipers have provision for emergency brakes and they're not working, or your calipers don't have e-brake provisions. Please advise.
I have a set of GM rear single piston calipers on my Ford 9" axle - installed them myself from a kit I bought (MGP, I believe EDIT: MBM). They're the 'large' calipers that preceded the 'metric' calipers, but I believe the designs are very similar. I do remember the rear caliper adjustments were a critical part of the installation, plus there are strong warnings that you need to use the e-brake on a regular basis or you will lose the function of the rear brakes.
