I'm not going to offer up any numbers, but I will point out that the temperature of the oil and water is different in different locations in the engine. The temperature of the oil that is in contact with the underside of the piston is way, way hotter than the oil circulating around the temp sensor in the pan. So, if the desire is to "burn off" moisture and condensation, you can do that without ever having an oil temp reading anywhere near 212 degrees.

Water temp is water temp. It will vary depending on your location, how hot it is outside, and if you're idling or moving. We are speaking ideal numbers here, so I threw out 190-195. Wouldn't hurt my feelings if it were a little over 200, but I generally don't like to see engines colder than the former numbers....especially all-aluminum engines.

Oil temperature needs to be hot enough to burn off condensation. Modern vehicles run at around 220-230 oil temp. It's true that oil temp will be different in different points of the engine, but most of the time, water will condensate in the lifter valley and top of the heads.

On the dyno, oil temp usually gets to around 170-180 degrees, measured at the oil pan bung. We simply don't run them for 30-40 minutes non-stop though.

Dimis, when I run my engine hard, I can get the oil temp up to 95C and the water temp up to 90C, when moving.
