I do not think you would see much difference with either head or enough to tell. I would go with new Racing Head Ford cast iron head or the World heads if I had to have iron. We have good luck with the racing Service head and porting them to flow to 330 cfms on the intake side with a 2.100 valve.
It just depends on what you are trying to do with the engine and the power that you want to make.
