Hi Hector,
Don't underestimate yourself. With some aluminum available at Home Depot, a hack saw, file and drill with a few bits, you could do it. It is simply an extension of what is already there - just copy the hole pattern and cut it out. It will move the pedals closer. Same with a piece of wood on the gas pedal and a few screws from the back to hold it on.
If a seat cushion moves her too close to the steering wheel, this is actually a good solution.
