I spoke to a couple of insulation suppliers and they reckon it's OK to use batts with a colorbond shed as long as you have a layer of foil between the batt and the steel. That shields them from the condensation.

I've seen some 'slide back' shades on wire tracks that concertina when opened. I don't know where I saw them but they were pretty simple. Maybe you could fit them to pull down when you aren't in the shed.
